Our hotel

The Balmoral is located at Edinburgh’s most prestigious address, No. 1 Princes Street, where the Old Town stops and the New Town begins. Your key responsibilities

We would love to invite you to join Mathew Sherry, Chef de Cuisine in our fine dining, 4 AA Rosette Number One restaurant kitchen working alongside our talented chefs passionate about using fresh seasonal produce while developing and training their team.

Like our award‑winning team, you should be passionate about modern cooking, being creative, and delivering world‑class hospitality to our guests.

As a valued part of the Forte family, you will:

  • Be responsible for creating exceptional pastries and desserts for our discerning guests, adding your own flair and innovation to menu favourites.

  • Be responsible for managing and motivating a team, working alongside the Executive Pastry Chef to ensure the best possible dining experience for our guests.

  • Use the finest products, and cook from scratch to create a unique experience for our guests

  • Work alongside the chefs to prepare and present food to the highest standards

  • Use creative methods of cooking

  • Be able to work under pressure during busy periods

  • Cooperate well with colleagues in own team and across departments

  • Be knowledgeable of the hotel and our products, and actively seek opportunities to promote them

  • Take ownership of own tasks and responsibilities in line with the departmental standards

£31,000 expected package (includes base salary plus qualified estimate of service charge)
