Located just off the M5, Best Western Bristol North – The Gables Hotel combines a warm welcome with stylish surroundings and great dining. Our Marco’s New York Italian restaurant delivers a vibrant, high‑quality dining experience under the Black & White Hospitality brand, complemented by a relaxed hotel bar and versatile conference and event facilities that cater for business meetings, celebrations, and weddings.

Role Overview

As Assistant Food & Beverage Manager, you will play a key role in the day‑to‑day running of our F&B outlets, including Marco’s Restaurant, the hotel bar, and our conference and events spaces. You’ll support the Operations Manager in leading the teams to deliver exceptional guest experiences, efficient operations, and strong financial performance.

You’ll also act as a key liaison with Black & White Hospitality, supporting training and brand compliance to ensure that the standards and ethos of Marco’s are consistently delivered.

This is a full time position (37.5 hours) working 5 days out of 7 including evenings, weekends and key bank holidays.

Key Responsibilities
  • Support the management of daily F&B operations across Marco’s, the bar, and C&E areas.
  • Deliver an exceptional guest experience through attention to detail, product knowledge, and team engagement.
  • Supervise, motivate, and develop team members to uphold high service standards and brand consistency.
  • Act as a liaison with Black & White Hospitality, ensuring brand standards, training initiatives, and operational updates are effectively communicated and implemented.
  • Support with menu rollouts, promotional activity, and service improvements in partnership with Black & White Hospitality.
  • Monitor stock levels, purchasing, and cost control to achieve budgeted profitability.
  • Assist in scheduling, labour management, and performance monitoring.
  • Deputise for the Food & Beverage Manager in their absence, ensuring smooth operations.
  • Ensure compliance with all food hygiene, health and safety, and licensing regulations.
  • Support the planning and execution of conferences, weddings, and private events.
About You
  • Previous supervisory or assistant management experience within a hotel or branded restaurant environment.
  • Strong operational knowledge across restaurant, bar, and events settings.
  • Confident in leading by example and maintaining brand standards.
  • Excellent communication and interpersonal skills, with the ability to motivate and develop teams.
  • Commercially aware with an understanding of cost control, margin management, and guest satisfaction metrics.
  • Adaptable, organised, and comfortable working in a fast‑paced, hands‑on environment.
  • Flexible to work a variety of shifts, including evenings, weekends, and events.
