Senior Chef de Partie - Pastry
About the Role
Our award‑winning kitchen team offers a permanent, full‑time role for a Senior Chef de Partie in the Pastry team at Old Course Hotel, Golf Resort & Spa.
In this position you will create exquisite dishes using locally sourced Scottish produce, manage your own section, and work under the Pastry Sous Chef to maintain the highest standards of quality and cleanliness.
Responsibilities
- Manage and oversee food production as directed, ensuring timely presentation.
- Assist the Pastry Sous Chef in planning, preparing, and executing new menus and ideas.
- Supervise and motivate Chef de Parties, Commis Chefs, and Demi Chefs to meet standards.
- Maintain open communication with Senior Team and Chef de Parties, addressing special requests promptly.
- Maintain the kitchen recipe manual and SOPs, ensuring consistent production quality.
- Assist in ordering food purchases and stock control, keeping stock levels aligned with business needs.
- Support the Pastry Sous Chef with hiring back‑of‑house staff in line with company policy.
- Enforce discipline and manage timekeeping in a fair and consistent manner.
- Ensure the smooth running of the kitchen in the absence of the Sous Chef.
- Maintain basic equipment such as knives, pallet knives, and mini scales.
- Run your section in accordance with menus and operating procedures.
- Follow all HACCP systems and complete day‑to‑day due diligence.
- Be fully conversant with departmental LQA standards.
Qualifications
- Prior experience as a Senior Chef de Partie or Chef de Partie.
- Strong knowledge of plated desserts, chocolate work, and patisserie.
- Creative passion for modern pastry trends and techniques.
- Culinary education preferred but not required.
- Solid understanding of culinary terminology and techniques.
- SVQ 1 & 2, MVQ or equivalent qualification.
- Experience in staff training and development.
- Knowledge of menu composition and food handling and sanitation standards.
Hours & Salary
Permanent, Full Time, 40 hours per week, 5 days out of 7.
£32,213.96 per annum.
