Join to apply for the Assistant F&B Director role at Estelle Manor

We are seeking an innovative and driven Assistant Food & Beverage Director to join our leadership team at Estelle Manor. This role is central to shaping and elevating our beverage culture across all bars and dining outlets, working closely with our Bars team to ensure every guest experience is exceptional. You will support the Director of F&B in overseeing the operational and strategic aspects of the department while partnering with the Head of Bars to lead beverage initiatives – from menu development and supplier relationships to training, service standards, and brand partnerships.

As Assistant F&B Director you will:

  • Support the Director of F&B in managing the overall performance of the department, ensuring financial, guest satisfaction, and quality targets are met.
  • Collaborate closely with the Head of Bars to ensure bar operations align with brand standards, beverage vision, and guest expectations.
  • Lead, coach, and inspire the F&B management team, fostering a culture of excellence, creativity, and accountability.
  • Partner with the Head of Bars to develop, implement, and maintain innovative beverage programs across all venues.
  • Curate distinctive beverage menus, highlighting cocktails, wines, spirits, and non-alcoholic options that resonate with our guests.
  • Build and maintain strong relationships with beverage suppliers, premium brands, and local partners to enhance offerings and create collaborative opportunities.
  • Oversee stock management, pricing strategies, and profitability across all bar operations.
  • Inspire, mentor, and develop talent within the F&B team, supporting career progression and skill development.
  • Contribute to the F&B strategy, business plans, and revenue growth initiatives.
  • Monitor key performance indicators and implement initiatives to optimize operational efficiency and profitability.
  • Collaborate with the Head of Bars to ensure the beverage program supports commercial goals while enhancing the guest experience.

About You

  • Proven experience in a senior F&B leadership role within a 5-star or luxury lifestyle hotel.
  • Previous pre-opening experience is welcomed.
  • Deep passion for beverage culture, including cocktails, wines, spirits, and non-alcoholic innovation.
  • Strong network within the beverage industry and experience in managing partnerships and collaborations.
  • Creative, commercial, and detail-oriented mindset with the ability to execute on strategy.
  • Natural leader and mentor who can inspire and develop teams through collaboration.
  • Enthusiastic about delivering world-class hospitality and exceptional guest experiences.
