Darwin is a rooftop all‑day restaurant inspired by the very best of British cuisine. The space is laid‑back yet luxe, with nature‑inspired décor that lets the food and the incredible view shine.

Role Purpose

A proven leader, the Restaurant Manager will ensure the team is trained to deliver the highest level of service to up to 1,000 guests per day. Responsibilities also include managing administration, rota, payroll, recruitment and supplier groups.

Responsibilities
  • Train and lead a team of 75 staff to provide exceptional service.
  • Maintain daily operations including staffing, scheduling and payroll.
  • Oversee recruitment, training, and performance reviews.
  • Ensure food safety, quality standards and regulatory compliance.
  • Coordinate with management for events and group bookings.
Qualifications
  • Minimum of 3 years experience as an Assistant Restaurant Manager or Restaurant Manager in a high‑volume, fast‑paced dining environment.
  • Strong leadership, communication and organisational skills.
  • Charismatic, engaging and able to command respect from a diverse team.
  • Ability to manage high volumes of guests and maintain service standards.
