Responsibilities
  • Lead all hotel F&B operations: Meetings & Events, Breakfast, In-Room Dining, Restaurants, and Bars.
  • Execute the F&B strategy and ensure brand standards are consistently applied.
  • Deliver departmental profit and manage all F&B cost lines while maintaining exceptional guest experience.
  • Workforce planning: recruitment, rostering, retention, and incentive plans.
  • Menu engineering and stock control: optimize menus, manage inventory, and control beverage cost of sale.

  • Compliance: HACCP, Food Safety Level 3, FHIS pass rating, and work toward Eat Safe Award.
  • Audit and resolve operational issues: food quality, service delivery, reservation processes.
  • Develop supplier partnerships and leverage opportunities for cost and quality improvements.
  • Drive colleague engagement: performance reviews, recognition, and team development.
  • Analyse performance: prepare month-end reports and present to senior leadership.
  • Stay ahead of market trends and implement new F&B initiatives.
  • Manage technology systems: reservation, POS (Micros Simphony), procurement (ProcureWizard), and workforce planning (Quinyx).
  • Collaborate cross-functionally with Executive Chef, Commercial team and IHG support functions.
  • Achieve and maintain FHIS Pass rating across all F&B outlets and work toward Eat Safe Award where applicable.
Qualifications
  • Proven experience managing large Catering & Events (C&E) business operations with multiple F&B outlets.
  • Strong commercial and financial acumen with ability to develop and implement revenue strategies.
  • Proficiency in F&B management systems such as Micros Simphony and other relevant POS and reservation systems.
  • Possession of an Alcohol Personal Licence and completion of relevant industry courses; Food Safety Level 4 certification is preferred.
  • Experience developing and executing F&B sales and marketing plans, leveraging online channels and on-property promotions.
  • Demonstrated ability to stay ahead of F&B trends, technology, and market shifts to drive innovation.
