Fallow was founded by three individuals in May 2019, two chefs Jack Croft and William Murray, and career hospitality entrepreneur James Robson. The essence of this combination makes up much of Fallows DNA, where conscious culinary creativity meets hospitality experience and passion. Fallow’s permanent home in St James’s market was established in November 2021 and has since attracted a string of awards including both the Marie Claire and GQ ‘sustainable restaurant of the year’ and the Caterer award for ‘best new restaurant’.

We are seeking a talented and driven Head Pastry Chef to join our team and lead the daily operations of our pastry kitchen. This is an exciting opportunity for an experienced professional who is passionate about creativity, precision, and delivering world‑class pastry experiences. You will work closely with and report directly to the Executive Pastry Chef, supporting them in menu development and ensuring the seamless execution of all pastry production.

Key responsibilities:
  • Oversee the day-to-day operations of the pastry kitchen, ensuring smooth service and consistent high standards.
  • Lead, mentor, and develop the pastry team, fostering a positive, organised, and high-performance working environment.
  • Ensure excellence in all aspects of pastry production, presentation, and service.
  • Support the Executive Pastry Chef with menu development, contributing creative ideas and helping implement new items.
  • Maintain rigorous standards of hygiene, food safety, and cleanliness throughout the pastry kitchen.
  • Assist with stock control, ordering, and cost management to ensure efficient and sustainable operations.
  • Collaborate with other kitchen departments and front‑of‑house teams to ensure seamless service delivery.
  • Uphold strong relationships with suppliers, ensuring the use of premium, ethically sourced ingredients.
About you:
  • Proven experience as a Head Pastry Chef, Senior Pastry Sous Chef, or similar role within a 5‑star hotel, Michelin‑starred restaurant, or other high‑end hospitality environment.
  • A genuine passion for pastry artistry, seasonal ingredients, and innovation in flavours and techniques.
  • Strong leadership skills, with the ability to train, inspire, and support a skilled pastry team.
  • Excellent organisational skills and the ability to manage multiple tasks in a fast‑paced environment.
  • A collaborative mindset with a commitment to maintaining a positive kitchen culture.
  • Meticulous attention to detail, ensuring consistency and excellence in every dessert and baked item.
