MLOOM Trattorias, a fast‑growing restaurant brand majority‑owned by MLO CORP, seeks a Chief Operating Officer (COO) to lead daily operations, elevate performance, and support the ongoing expansion of the group.

We are looking for a strategic, hands‑on leader capable of driving operational excellence across multiple locations while maintaining the authentic, guest‑centered identity of our trattorias.

Key Responsibilities
  • Develop and execute operational strategies aligned with MLO CORP’s vision.
  • Oversee day‑to‑day operations across all current and future MLOOM Trattorias locations.
  • Implement and standardize processes to enhance quality, efficiency, and profitability.
  • Lead expansion initiatives, including new openings and market development.
  • Build, mentor, and inspire high‑performance teams while strengthening organizational culture.
  • Monitor and analyze KPIs to guide data‑driven decision‑making.
  • Ensure exceptional customer experience and consistent product quality across the brand.
  • Collaborate directly with Executive Management to drive strategic growth.
Requirements
  • 2–5 years of experience in senior operational roles within the restaurant, hospitality, food service, or retail sectors.
  • Fluent Italian and English (required).
  • Spanish is a plus.
  • Ability to manage multi‑unit operations effectively.
  • Strong strategic thinking, organizational skills, and execution capabilities.
  • Excellent leadership, communication, and problem‑solving abilities.
  • Passion for gastronomy, customer experience, and high‑quality service environments.
