What You’ll Do:

As a Production Manager, you’ll oversee all daily manufacturing operations within our commissary - including sushi production, packaging, labelling, and outbound order staging. You’ll ensure safety, consistency, and efficiency across shifts while upholding the highest standards of food safety and quality. This position requires active floor leadership and strong communication between prep, production, and delivery.

Responsibilities:
  • Lead daily production operations and oversight of prep, roll assembly, cutting, packaging, and labeling per Hissho’s procedures.
  • Supervise team members to meet quality, yield, and efficiency goals.
  • Maintain and verify all production documentation - including rice pH, temperature, and sanitation logs.
  • Ensure compliance with FDA, Seafood HACCP, and GMP requirements.
  • Conduct daily food safety checks and support facility sanitation procedures.
  • Partner with Strategic Operations to coordinate cooler loading and delivery routing.
  • Track inventory levels of raw materials and finished goods; communicate needs to leadership.
  • Support continuous improvement efforts around throughput, waste reduction, and process consistency.
  • Foster a positive, safety-focused team culture through active leadership and accountability.
  • Monitor production schedules, batch sheets, and order fulfillment accuracy.
  • Oversee packaging, sorting, and staging of finished products for timely delivery.
Requirements
  • 2+ years of experience in sushi production (restaurant, manufacturing, or commissary kitchen) with at least 1 year in a supervisory or lead role.
  • ServSafe Manager certification and Missouri Seafood HACCP certification (or willingness to obtain).
  • Strong organizational and leadership skills; able to lead teams in a fast-paced, high-volume environment.
  • Comfortable working afternoon/evening shifts and weekends as production demands.
  • Ability to lift up to 50 lbs and stand for extended periods.
  • Strong English communication and documentation skills.
Preferred:
  • Experience in high-volume sushi or seafood manufacturing, especially ready-to-eat (RTE) environments.
  • Familiarity with Suzumo rolling/cutting machines and BOHA labeling systems.
  • Background in production planning.
  • Working knowledge of FDA documentation and traceability.
  • Experience managing HACCP verification, sanitation audits, or corrective action processes.
