Job description

Scope of work (JOB PURPOSE)

Under the guidance of the Financial Controller, the successful candidate will effectively control the Food & Beverage Cost, supervise and monitor inventory counts, and manage wastage, pilferage, and efficiency in the Food and Beverage outlets. Prepare COGS variance analysis for food & beverage and communicate with relevant parties.

Main Responsibilities

  • Prepare daily food & Beverage cost report.
  • Monitor & assess menu pricing to ensure alignment with cost margins and profitability.
  • Manage & track inventory levels of food and beverages, ensuring proper stock levels and minimizing spoilage and wastage.
  • Participate & supervise regular physical inventory counts and reconcile against system data.
  • Conduct surprise spot checks at all F&B outlets and Warehouse.
  • Calculate and update food and beverage recipe costs, ensuring accurate costing for all menu items.
  • Work with F&B team to optimize menu pricing and offer suggestions to align with cost objectives.
  • Identify areas of food and beverage waste and implement strategies to minimize waste, such as improving portion control or better storage practices.
  • Submit monthly F&B report for management review, including Menu Engineering, Sales Mix, Non & Slow-moving report, Cost of Sales, etc.
  • Analyze financial reports and provide insights into cost control performance and budget adherence.
  • Provide guidance to management on cost-effective strategies for improving profitability.
  • Follow established internal controls to ensure accurate and transparent cost reporting.

Health & Safety

Managers/Supervisors are responsible for all aspects of Health, Safety & Security within their department, in line with the Group Policy (HS001). They must ensure that risk assessments are carried out, safe working procedures are in place for all work activities, and that all employees under their management are aware of the Group Health, Safety and Security Policy and their obligations under it. They must ensure that safe working practices are monitored and that risk assessments and procedures are reviewed regularly. Where incidents do occur, they must ensure that they are investigated appropriately and that corrective action is taken to prevent recurrence.

Qualifications, Experience, & Skills

Required Qualifications:

  • Bachelor’s degree in accounting, Business, or related field is required.

Required Experience:

  • At least 3 years of work experience in the finance division of a company.
  • Experience with Adaco (Inventory Management).
  • Familiarity with Symphony, Oracle Fusion, Opera is preferred.
  • Knowledge of Advanced Excel is preferred.
